I’m a day late (and long overdue) on this post, but I wanted to take this opportunity to wish my mom a very happy birthday!
My absence from the blog world is the product of my recent travels. In the span of a week, I spent time in Kansas, New Jersey, and New York. While these spots aren’t exactly your typical vacation destinations, I enjoyed every minute I spent there because it meant spending time with family that I don’t get to see often enough. Upon my return, I knew my first project had to be this cake.
While we live 3000 miles apart, I didn’t want to pass up the opportunity to make my Mom her favorite cake on her birthday: a yellow cake with fudge filling and vanilla buttercream. So here’s to you, Mom, I hope this birthday is your best yet. I love you! Enjoy your virtual slice of birthday cake :)
For the cake, I used this recipe from Smitten Kitchen. For the fudge filling, I used this recipe, also from Smitten Kitchen (reducing it down to 1/6 it’s original size). The vanilla buttercream recipe comes from Bakingdom.
