Must-Make Mondays: Creamy Cauliflower Soup

Many of the recipes you see here are inspired by some of my favorite blogs. I can’t think of a better way to pay homage to those blogs than to make some of their recipes, with no adaptations or changes. This brings me to what I’ve deemed “Must-Make Mondays.” For an undetermined period of time, I’ll be sharing some of my favorite recipes from other blogs. The first in this series is a fantastic soup from How Sweet It Is.

When a head of cauliflower, an onion, and a quart of half and half came in my weekly produce delivery, I knew I had to make this soup. And just as Jessica describes it, it’s extra creamy and luxurious, and with very little butter or cream! I poured two bowls to photograph around 11:30 in the morning and once shooting was complete, I allowed myself to have a little taste of this soup, and I couldn’t.stop.tasting. Before I knew it, I had devoured the entire bowl. It was that good.

I left out the chive oil because I didn’t have any chives, and the capers because I didn’t have any of those either, but I have no doubt in my mind that they would both make an awesome addition to this soup – as if it isn’t good enough already! I know I command you to make many recipes you find here, but seriously, make up a batch of this soup. It’ll get you through Hurricane Sandy or any other storm you might have to weather.

The first time I had Cauliflower Soup was when I went to Jamaica of all places. It’s one of my favorites now, it always reminds me of my vacation!
