A Microwave-Friendly Breakfast

When I saw this post late last night from The Lean Green Bean, I knew exactly what my breakfast today would be. Eggs are a huge staple in my diet and I certainly was going to miss them without a stove in the house. That problem is solved with microwaveable eggs! Just scramble up the egg in a ramekin or bowl, microwave for 30-40 seconds, top with cheese (if desired) and dig in! I had mine with an apple and spoonful of peanut butter for a well-rounded, protein-filled breakfast.

Microwaving is actually my preferred method to cook scrambled eggs unless I’m doing the whole bacon and hash brown thing.
